Ingredients:
4 chicken breasts, sliced 1/4" thick
1 c coconut milk
3 Tbsp curry powder
1 tsp kosher salt
20-24 9” bamboo skewers
Directions:
Soak bamboo skewers.
In a medium bowl, marinate chicken breast, coconut milk, curry powder, salt. Mix well. Marinate for one hour or overnight.
Skewer chicken on soaked bamboo skewers. Heat grill pan or outdoor grill. Grill 1-2 minutes on each side until chicken is throughly cooked.
Serve with Jai's Thai Peanut Sauce and Cucumber Salad (not pictured).
Cucumber Salad
Ingredients:
2 Tbsp sugar
1/2 c rice vinegar
Salt to taste
1/2 cucumber, peeled and seeded, cut into 1/2" cubes
1 small shallot, sliced
1/2 small carrot, peeled and shredded
In a medium bowl, mix sugar, vinegar, and salt. Stir until sugar has dissolved. Add cucumber, shallot and carrot let it sit for 10-15 minutes. Serve alongside Chicken Satay and Jai's Thai Peanut Sauce, regular or spicy.
