Pork Shish Kabobs

Ingredients:

1-1/2 lbs pork lion, cut into 1-1/2" cubes

1/4 c Jai's Thai Peanut Sauce

1 tsp kosher salt

1/2 tsp pepper

1 red bell pepper, cut into 1-1/2" squares

1 green bell pepper, cut into 1-1/2" squares

1 small red onion, cut into 1-1/2" cubes

4 mushrooms, cut in half

8 small cherry tomatoes

1 lemon

8 9” bamboo skewers

 

Directions:

Toss cubed pork with Jai's Thai Peanut Sauce, salt and pepper. Mix well and marinate for 1 hour or best overnight.

Soak bamboo skewers.

Fill skewers with mushroom, tomato, pork, and peppers.

Set grill pan or outdoor grill to high heat.

Grill kabobs on 2-3 minutes on all sides, adjusting heat as needed until pork is thoroughly cooked.

Squeeze fresh lemon juice on kabobs and serve with Jai's Thai Peanut Sauce on the side.
