Ingredients:
1 medium cauliflower, sliced into 1 to 1-1/2" florets
1 tsp kosher salt
1/2 tsp black pepper
1/2 c rice or all-purpose flour (substitute gluten-free flour as needed)
1/2 c oil
1 c Jai’s Thai Peanut Sauce, regular or spicy
1/2 fresh lime
Sliced green onion for garnish (optional)
Directions:
In medium bowl mix flour, salt and pepper.
Coat florets in flour mixture. Shake off excess flour.
Heat oil in wok or frying pan. Add cauliflower florets in small amounts at a time. Cook until tender, adjusting heat and turning florets as needed. Use tongs or a cooking spider to remove florets from oil. Place onto paper towels.
In a medium bowl, add cooked florets and peanut sauce. Squeeze the 1/2 lime and toss well. Add salt and pepper to taste. Garnish with sliced green onion.
